Vegetable CousCous

  • 1 tbsp EVOO
  • 1/2 cup chopped onion
  • 3/4 cup diced mushrooms
  • 1 cup diced tomato
  • 1 c baby spinach
  • 1 cup couscous
  • 3/4 cup chicken broth

  1. Sauté the onion and mushrooms until the water is gone
  2. Add the spinach and tomato to the pot and stir
  3. Add 1 cup of couscous 
  4. Add in the chicken broth and bring to a boil, then shut off the heat and cover
  5. Wait at least 10 minutes before checking
  6. fluff to serve

NOTE: you can replace the couscous with any grain and come out with the same effect. I use whole wheat couscous.
