You will want to prep and even cook these the day before.
- 3 green bell peppers
Cut bell peppers in half lengthwise and clean out.
Drop in boiling water for a couple of minutes to slightly soften
Filling:
- 1 lb Crumbled, cooked sausage
- 1 cup frozen shredded potatoes
- 1 cup shredded cheese, divided
- 6 eggs
- 6 green onions, sliced
- Mix all of the above together and stuff into the green pepper halves.
- Cover with foil and bake at 425 for 20 minutes
- Top with remaining cheese and place back in until cheese melts
