Beef & Veggie Skillet with Feta

  • 12 oz ground beef
  • 1 zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 onion (sliced)
  • 1/4 cup feta cheese (crumbled)
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Fresh parsley for garnish

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and sauté until translucent.
  3. Add ground beef, cook until browned.
  4. Add zucchini and cherry tomatoes, cook until tender.
  5. Season with salt and pepper.
  6. Sprinkle feta cheese and parsley on top before serving.
