Oatmeal Breakfast cookies

This makes 12 cookies. A serving is 2 cookies. One thing I would recommend is placing them in an airtight container after they've cooled down completely.

  • 1 cup old-fashioned rolled oats
  • 2 eggs
  •  1/3 cup natural peanut butter (no added sugar)
  •  1/3 cup unsweetened applesauce
  •  1/4 cup almond flour
  •  1 teaspoon cinnamon
  •  1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 2 tablespoons monk fruit sweetener (optional)
  •  2 tablespoons chopped walnuts
  •  1 tablespoon chia seeds (optional)

  1. Preheat oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. Mix eggs, peanut butter, applesauce, and vanilla.
  4. Stir in oats, almond flour, cinnamon, baking powder, and monk fruit.
  5. Fold in walnuts and chia seeds.
  6. Let mixture sit for 5 minutes so the oats absorb moisture.
  7. Spoon into 12 cookies and flatten slightly.
  8. Bake for 12–15 minutes until set.
  9. Cool before storing.
