Creamy Tossed Salad

  •  1 bag shredded romaine or iceberg lettuce
  • ½ cucumber, diced
  • ½ red bell pepper, chopped
  • ¼ red onion, finely diced
  • ½ cup chopped deli turkey or grilled chicken breast
  • ¼ cup sliced black olives
  • ¼ cup crumbled feta cheese (or mozzarella if you prefer)
  • 1 small handful cherry tomatoes, halved
  • 1–2 tbsp banana peppers or pepperoncinis for a little kick
  • Sprinkle of oregano or Italian seasoning

Dressing

  • ¼ cup plain Greek yogurt
  • 2 tbsp light mayo (for creaminess)
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • ½ tsp garlic powder
  • Salt & pepper to taste

  1. Whisk everything together until creamy and smooth.
  2. Toss all the veggies, meat, and cheese in a big bowl.
  3. Drizzle the dressing over and toss again until everything’s lightly coated.
  4. Chill for about 10 minutes before serving so the flavors blend.
  5. Add a little more feta or pepperoncinis on top if you like that salty-spicy bite.
