Squaw Corn

  •  8 slices of bacon
  • 2  onions, sliced thin
  • 8 ears of corn, corn cut off the cob
  • 1/2 tsp salt
  • 8 eggs, slightly beaten
  • pinch of pepper

  1. Cut bacon in small pieces nd fry
  2. Add onions and saute until light brown
  3. Add corn and salt and cook for 5 minutes
  4. Add the eggs and cook until thickened, stirring from the bottom of the skillet.
  5. Serves 8
  6. It may be served on toast if you like. 
  7. Canned corn may be substituted and if you like, top with cheddar cheese
