- 8 slices of bacon
- 2 onions, sliced thin
- 8 ears of corn, corn cut off the cob
- 1/2 tsp salt
- 8 eggs, slightly beaten
- pinch of pepper
- Cut bacon in small pieces nd fry
- Add onions and saute until light brown
- Add corn and salt and cook for 5 minutes
- Add the eggs and cook until thickened, stirring from the bottom of the skillet.
- Serves 8
- It may be served on toast if you like.
- Canned corn may be substituted and if you like, top with cheddar cheese
