Roasted Cauliflower and Cheese
- 1 head cauliflower
- 1/4 cup EVOO
- salt and pepper to taste
- 1 cup Gruyere cheese, shredded
- 1 cup freshly shredded parmesan
- 2 tbsp chopped fresh parsley to garnish
- To cut up the cauliflower:
- Cut off the green end then core the cauliflower and cut into the florets one at a time, halving the larger ones.
- Toss the cauliflower in the oil and spices.
- Place in the oven at 350 and roast for 30 minutes, flipping halfway.
- Top with the cheeses and place back in the oven for 2 minutes to melt the cheese.
- Top with parsley and serve.
