Roasted Cauliflower and Cheese

  •  1 head cauliflower
  • 1/4 cup EVOO
  • salt and pepper to taste
  • 1 cup Gruyere cheese, shredded
  • 1 cup freshly shredded parmesan
  • 2 tbsp chopped fresh parsley to garnish

  1. To cut up the cauliflower: 
  2. Cut off the green end then core the cauliflower and cut into the florets one at a time, halving the larger ones.
  3. Toss the cauliflower in the oil and spices.
  4. Place in the oven at 350 and roast for 30 minutes, flipping halfway.
  5. Top with the cheeses and place back in the oven for 2 minutes to melt the cheese.
  6. Top with parsley and serve.
