- 1 cup cottage cheese
- 2 large eggs
- ½ cup oat flour (or almond flour for low-carb)
- 1–2 tbsp honey or maple syrup (optional)
- 1 tsp vanilla extract
- ½ tsp baking powder
- Pinch of salt
- ½ cup chopped fresh strawberries
- Oven: Preheat to 350°F and grease or line a mini muffin tin.
- Air fryer: Preheat to 320°F (160°C).
- In a blender or bowl, mix cottage cheese, eggs, honey, and vanilla until smooth.
- Add oat flour, baking powder, and salt. Stir until combined.
- Fold in chopped strawberries.
- Divide into muffin cups and bake for 18–22 minutes, until golden and fluffy.
- If Using the Air Fryer: Spoon into silicone molds and cook 10–12 minutes until set.
- Let cool slightly before serving.
