- 2 cups almond flour
- 3 tbsp coconut flour
- 5 eggs
- ½ cup sweetener (erythritol or monk fruit)
- 1 tsp vanilla extract
- 1½ tsp baking powder
- 3 tbsp heavy cream
- 3 tbsp melted butter
- 1 cup chopped strawberries
- Preheat oven to 350°F and line a loaf pan with parchment.
- In a bowl, whisk eggs, vanilla, sweetener, heavy cream, and melted butter.
- In another bowl, mix almond flour, coconut flour, and baking powder.
- Combine wet and dry ingredients until smooth.
- Gently fold in chopped strawberries.
- Pour into pan and bake 40–45 minutes, until golden and toothpick comes out clean.
