Christmas Cake
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream (or plain Greek yogurt)
- ¼ cup milk
- ½ cup red and green sprinkles (jimmies or chopped holiday nonpareils)
- For the glaze:
- 1 cup powdered sugar
- 2–3 tbsp milk
- ½ tsp vanilla extract
- Extra sprinkles for topping
- Preheat oven to 350°F. Grease and flour a 9x5” loaf pan.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In a separate large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well.
- Mix in vanilla, sour cream, and milk until smooth.
- Gradually add the dry ingredients to the wet and stir just until combined.
- Fold in the festive sprinkles gently — don’t overmix or they’ll bleed!
- Pour batter into prepared pan and smooth the top.
- Bake 45–55 minutes or until a toothpick comes out clean.
- Cool completely.
- For the glaze, whisk powdered sugar, milk, and vanilla until smooth.
- Drizzle over the cooled loaf and decorate with more sprinkles!
