Baked Cottage Cheese Eggs
- 1 cup low-fat cottage cheese
- 4 large eggs
- 1/4 cup chopped fresh chives
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat your oven to 350 F (175 C).
- Lightly coat a baking dish with cooking spray.
- In a mixing bowl, combine the cottage cheese, eggs, chopped chives, salt, and black pepper.
- Mix well until all ingredients are evenly incorporated
- Pour the mixture into the prepared baking dish, spreading it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the edges are golden brown.
- Once done, remove from the oven and let it cool for a few minutes before serving
