Stuffed Celery Fills

 Stuffed celery was all the rage in the 70s, but experienced a downward spiral by the 90s. Still, its one of the healthiest and tastiest ways to enjoy celery. 

HINTS FOR FILLING CELERY.

  • Wash AND DRY your stalks before stuffing.
  • Cut in lengths no longer than 3". Anything longer makes it awkward to pick up and eat.
  • If you can match the cuts up, you can stuff them double-sided! 
  • Level off your stuffing- too much makes for messy fingers!
Stuffing 1:
  • 8 oz cream cheese- room temperature
  • 2 tbsp sour cream-room temperature
  • 1/4 cup finely chopped walnuts
  • 20 green olives with pimentos, chopped fine
  1. Mix everything together in a bowl and stuff as desired. 
  2. Cover the plate with plastic wrap and refrigerate until time to serve (at least 1 hour)
