Stuffed celery was all the rage in the 70s, but experienced a downward spiral by the 90s. Still, its one of the healthiest and tastiest ways to enjoy celery.
HINTS FOR FILLING CELERY.
- Wash AND DRY your stalks before stuffing.
- Cut in lengths no longer than 3". Anything longer makes it awkward to pick up and eat.
- If you can match the cuts up, you can stuff them double-sided!
- Level off your stuffing- too much makes for messy fingers!
Stuffing 1:
- 8 oz cream cheese- room temperature
- 2 tbsp sour cream-room temperature
- 1/4 cup finely chopped walnuts
- 20 green olives with pimentos, chopped fine
- Mix everything together in a bowl and stuff as desired.
- Cover the plate with plastic wrap and refrigerate until time to serve (at least 1 hour)
