Reuben Bake

  • 1 (16 oz) can sauerkraut, drained and rinsed
  • 1 lb sliced corned beef, chopped
  • 2 cups shredded Swiss cheese
  • 8 slices rye bread, cubed
  • 1 cup dill pickles, chopped, optional
  • 1 cup Thousand Island dressing
  • 1/2 cup mayonnaise

  1.  Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2.  In a medium bowl, whisk together the Thousand Island dressing and mayonnaise until smooth.
  3.  Spread half of the cubed rye bread evenly in the bottom of the prepared dish.
  4.  Layer on the chopped corned beef, drained sauerkraut, and half of the Swiss cheese.
  5.  Drizzle half of the dressing mixture evenly over the layers.
  6.  Top with the remaining rye bread cubes, the rest of the Swiss cheese, and the remaining dressing mixture.
  7.  Sprinkle the chopped dill pickles over the top if using.
  8.  Bake uncovered for 25–30 minutes, until the cheese is melted and bubbly and the bread is lightly golden.
  9.  Let rest for about 5 minutes before serving for easier slicing.
