Serves 4-6
- 1 lb ground beef
- 1 medium zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 small red onion, sliced
- 1 small yellow onion, sliced
- 2 cloves garlic, minced
- 100g feta cheese, crumbled
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried oregano
- Fresh parsley, chopped (for garnish)
- Brown the ground beef in a skillet
- Add in the tomatoes, onions, and garlic.
- Sauté together, adding in the spices.
- Toss in the zucchini and cook for another few minutes until softened
- Right before serving, add the feta and let it melt.
Serve alone or over rice!
