Creamy Rice Pudding

 for four

  • 1 1/2 cups cold water
  •  3/4 cup uncooked white rice
  •  2 cups milk, divided
  •  1/2 cup white sugar
  •  1/4 teaspoon salt
  •  1 large egg, beaten
  •  1/2 cup golden raisins
  •  1 tablespoon butter
  • 1/2 teaspoon vanilla extract

  1.  Pour water into a saucepan and bring to a boil over medium heat; stir in rice. 
  2. Reduce the heat to low, cover,  and simmer until the rice is tender and the liquid has been absorbed, about 20 minutes.
  3.   Combine cooked rice, 1 1/2 cups milk, sugar, and salt in a clean saucepan.
  4.  Cook over medium heat, stirring  often, until thick and creamy, about 15 minutes
  5.  Stir in the remaining 1/2 cup of milk, the beaten egg, and the raisins; cook for 2 minutes more, stirring constantly. 
  6. Remove from heat and stir in butter and vanilla until combined..
  7.  Serve warm
