- 1/4 c EVOO
- 2 tbsp ACV
- 2-3 tbsp lime juice
- 1/4 tsp each: cumin, garlic, onion powders
- 2 tsp sugar or substitute
- 1/2 mashed avocado, pureed
- 1 can of corn, NSA, drained
- 1 can of NSA petite diced toms
- 1 can black beans, drained, lower sodium
- 1 can of black-eyed peas, lower sodium
- 1/2 bell pepper, red
- 1/2 red onion, diced small
- 1/2 cup fresh chopped cilantro
- 10 oz of tortilla chips
Toss together and chill overnight
Serve with the chips
