- 2 cups cooked chicken, shredded
- 1 cup cottage cheese
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup Shredded mozzarella cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 t salt
- 1/4 t black pepper
- 1 tbsp olive oil
- 1/2 cup chicken broth
- 1 tsp Italian seasoning
- 1 cup cooked rice
- Preheat oven to 375 F and lightly grease a baking dish
- In a large bowl, combine shredded chicken, cottage cheese, spinach, mushrooms, cooked rice, garlic powder, onion powder, salt, pepper, and Italian seasoning.
- Pour the mixture into the prepared baking dish, then drizzle with chicken broth and top with mozzarella cheese
- Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is golden
NOTE: You can use the Uncle Bens unflavored rice in a pouch instead of making your own, just make sure to microwave it first.
