Cottage Cheese Chicken Bake

  • 2 cups cooked chicken, shredded
  •  1 cup cottage cheese
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  •  1 cup Shredded mozzarella cheese
  • 1 tsp garlic powder
  •  1 tsp onion powder
  •  1/2 t salt
  •  1/4 t black pepper
  •  1 tbsp olive oil
  •  1/2 cup chicken broth
  •  1 tsp Italian seasoning
  •  1 cup cooked rice

  1. Preheat oven to 375 F and lightly grease a baking dish
  2. In a large bowl, combine shredded chicken, cottage cheese, spinach, mushrooms, cooked rice, garlic powder, onion powder, salt, pepper, and Italian seasoning.
  3. Pour the mixture into the prepared baking dish, then drizzle with chicken broth and top with mozzarella cheese
  4. Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is golden

NOTE: You can use the Uncle Bens unflavored rice in a pouch instead of making your own, just make sure to microwave it first.
