Mix together:
- 1 1/2 lbs of chicken (may be canned, but drain it!)
- 2 medium eggs
- 1/3 c almond flour
- 1 c shredded mozzarella cheese
- 2tbsp chives
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Use a cookie scoop to place in a heated and oiled pan on medium-low heat, and flatten to make a fritter
- Don't overcrowd the pan.
- Cook for 6-8 minutes and enjoy!
