Cardamom Cake

 a Swedish delight!

Again, another cake my Mom used to make that goes back to the "old country," but instead of Germany, we're talking Sweden. Mom made this a few times for Mother-Daughter events, and it was a big hit! 

For the cake:

  • 1 cup butter, divided, softened
  • ½ cup plain dry bread crumbs
  • 2 ⅔ cups all-purpose flour
  • 1 cup white sugar
  • 1 cup milk
  • 1 tablespoon ground cardamom
  • 2 teaspoons baking powder

For the Topping:

  • 2 tablespoons ground cinnamon
  • 2 tablespoons pearl sugar

  1. Preheat oven to 350 degrees.
  2. Grease a fluted tube pan (such as a bundt pan) with 1/4 cup butter and dust with breadcrumbs.
  3. Mix 3/4 cup butter, flour, sugar, milk, cardamom, and baking powder together lightly in a bowl until a moderately stiff, lumpy dough forms, then transfer the dough to the prepared tube pan. 
  4. Sprinkle cinnamon and pearl sugar over the top of the dough, respectively.
  5. Bake in the preheated oven until a toothpick is inserted into the center and comes out clean, about 1 hour. 
  6. Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
