These could be any time of day but as a breakfast this can be a great change of pace!
It feeds four people
- 2 red bell peppers, cut in half (length or mid, your choice)
- 1/2 tbsp butter or olive oil
- 1/2 lb sausage
- 1/2 lb ham chunks, small
- 1/2 diced small onion
- salt and pepper to taste
- 1/2 cup cheese of choice, shredded
- 4 large eggs
- Clean out the halved peppers and sit, face up, on a pan.
- Set oven for 350 and bake them until they're softened and slightly puckered.
- Meanwhile, in a pan, melt the butter over medium heat
- cook the sausage until done, remove
- cook the ham until crispy, remove
- cook the onion until slightly cooked
- Add the meats back in, toss and season
- Remove the peppers from the oven and slightly cool before stuffing, dividing the filling between each.
- Place some cheese on each and pop into the oven to bake for around 10 minutes (tops)
- On the stove top, melt more butter or use olive oil in a non-stick pan to fry eggs over easy
- Remove the cooked peppers and top each with an egg.
VARIATIONS: You could cook small chunks of sweet potato with the meat to add another level of flavor.
