Chocolaty Banana Bread
- 3 large very ripe bananas, mashed
- 2 large eggs
- ¼ cup unsweetened cocoa powder
- 3 tablespoons pure maple syrup
- 1 tablespoon unsalted butter, melted and cooled
- 1 tablespoon vanilla extract
- 1 teaspoon baking powder
- ¾ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1½ cups whole milk
- 2½ cups old-fashioned rolled oats
- ¼ cup sliced almonds
- 2 tablespoons mini semisweet chocolate chips
- Preheat oven to 375°F.
- Lightly coat a 9-inch-square baking pan with cooking spray.
- Whisk the eggs with the banana
- Add ¼ cup cocoa, 3 tablespoons maple syrup, 1tablespoon melted butter, 1 tablespoon vanilla, 1 teaspoon baking powder, ¾ teaspoon cinnamon and ¼teaspoon salt until evenly combined.
- Add 1½ cups milk; whisk until smooth.
- Stir in 2½ cups oats and ¼ cup almonds.
- Transfer to the prepared baking dish; let stand for 10 minutes.
- Sprinkle the oat mixture with 2 tablespoons of chocolate chips.
- Bake until set in the center, about 35 minutes.
- Let cool in the baking pan on a wire rack for 20 minutes before serving.
