Spaghetti Bolognese

(serves four)

This is a very healthy alternative to thick pasta sauces, but it's not just for pasta! You can serve it over rice or even some crusty bread.

  • 2 tsp olive oil
  • 1 finely chopped onion
  • 1 tsp crushed garlic
  • 1/4 cup tomato paste
  • 1 tsp sugar (or stevia)
  • 14 oz can diced tomatoes (no salt added)
  • 1 lb ground beef (or turkey)
  • 8 and 3/4 oz dry spaghetti

  1. Sauté the meat until brown and pour off the fat.
  2. Sauté the garlic, onion 
  3. Add the tomato paste and cook until it darkens.
  4. Add in the diced tomatoes, stevia or sugar, and ground beef
  5. While the sauce is simmering, cook the spaghetti to al dente.
  6. Serve the sauce over the noodles.
