Simple Creamy Chicken Soup

 The original recipe for this is fat, fat, and more fat, and very carb-laden. So I thought I would "slimify" this one because it does sound really good for something so easy!

  • 3 cups skinless, boneless rotisserie chicken (I use breast meat but you can use what you like)
  • 2 cups unsalted chicken broth
  • 1 cup water
  • 1 package Ranch Seasoning (or you can use 2 oz of Memaw's LoSo version)
  • 2 cups Swiss Cheese (the original calls for cheddar, but it's fattier and has more sodium)
  • 4 oz crumbled turkey bacon (you can buy this OR make it yourself using lower-sodium turkey bacon)
  • 8 oz Neufchatel cheese or Laughing Cow light wedges (the original calls for full-fat cream cheese)

  1. In your pot (you can do this in an Instant Pot too), place the rotisserie chicken (cut up or shredded), the broth, water, and ranch seasoning. 
  2. Bring to a simmer (IP setting would be on saute)
  3. Stir in the shredded cheese and cream cheese and incorporate
  4. Turn down to low, add the bacon bits, and simmer for 15 minutes.
  5. Serve warm
