I wanted to come up with something different and go further in terms of the number of people served. This recipe makes five patties, all fairly thick and rounded. Of course, if you're feeling a little piggy, have two instead of one!
- 8 1/2 oz frozen or fresh salmon, no skin or bones
- 2 green onions, cut into 1" pieces
- 1 small celery rib, cut into small pieces
- 1 large egg
- 1/2 cups bread crumbs
- 2 tbsp dried parsley flakes
- 2 tbsp dried dill
- 1/2 tsp each of celery salt and Hungarian paprika
- Everything Bagel seasoning
- Cut the salmon down into 1" pieces.
- Put it into the food processor and process it until well-chopped.
- Add the onions and celery, and pulse until finely chopped.
- Add in the egg and the crumbs and stir together.
- Remove and place in a bowl, and mix with the bread crumbs and dry seasonings.
- Using a large ice cream scoop, scoop into six even patties.
- Plop out on wax paper and pat into a round shape around1" high
- Cover with more wax paper, and when all are made, chill for 2 hours.
- Pour the Everything Bagel seasoning onto a plate, then pat each patty with it on both sides.
- Place on a paper-lined oven tray and spray the tops.
- Bake at 375 for 20 minutes, flip and bake another 10 minutes
