Picadillo is a ground beef dish made on the stove and simmered to a soft braise. You could do this in an Instant Pot, and frankly, that's what I prefer to do because it takes less time. However, it doesn't let you make your house smell like picadillo so I would suggest making this on top of the stove during the winter if you want to hear "something smells great!" from family and friends!
- 1/2 large chopped onion
- 2 cloves garlic, minced
- 1 tomato, chopped
- 1/2 green bell pepper, finely chopped
- 2 tbsp cilantro (fresh is best; if using dry, reduce to 1 tbsp)
- 1 lb 93% lean ground beef (you could substitute with turkey)
- 4 oz tomato sauce
- kosher salt
- fresh ground pepper
- 1 tsp ground cumin
- 1-2 dried bay leaves
- 2 tbsp pitted green olives with 1 tbsp of the brine
- Over medium heat, and with 1 tsp oil, brown the meat.
- Add in the onion and garlic and cook until fragrant (about 2 minutes)
- Add in the bell pepper and cook for 1 minute more.
- Add the remaining ingredients and set the temperature to low for 2 hours, or place in the oven at 300 degrees for 1 hour.
- There are a lot of variations on the picadillo, and this is the simplest.
You can serve this over potatoes, noodles, rice, crusty bread, or dip it with some corn chips!
NOTE: You can also make this in an Instant Pot.
