Panelle

(Italian Street Food)

  • 1 ½ cups chickpea flour
  • 3 cups water
  • 1 teaspoon kosher salt
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon pizza seasoning 
  • canola oil 

TOPPINGS:

  • Lemon juice
  • Parmesan
  • Parsley

  1. Grab a  10”x15 cookie sheet, cover it with parchment paper, and set it aside 
  2. Add the chickpea flour, water, and salt to a saucepan and whisk until combined. 
  3. Heat the mixture over medium heat and whisk continuously for about 5-7 minutes. 
  4. The mixture will be very thick at this point and clumped together.  
  5. Remove the pan from the heat and add the parsley and pizza seasoning, and stir to combine
  6. Spoon the mixture onto the parchment-lined cookie sheet and spread it evenly.
  7. Place it in the refrigerator for at least an hour or until firm
  8. Once it has set, cut it into 16 rectangles 
  9. Fry in batches for about 2-3 minutes per side or until golden brown. 
  10. Drain on paper towels
  11. Top with fresh lemon juice, Parmesan cheese and more parsley
