(Italian Street Food)
- 1 ½ cups chickpea flour
- 3 cups water
- 1 teaspoon kosher salt
- 2 tablespoons chopped fresh parsley
- 1 tablespoon pizza seasoning
- canola oil
TOPPINGS:
- Lemon juice
- Parmesan
- Parsley
- Grab a 10”x15 cookie sheet, cover it with parchment paper, and set it aside
- Add the chickpea flour, water, and salt to a saucepan and whisk until combined.
- Heat the mixture over medium heat and whisk continuously for about 5-7 minutes.
- The mixture will be very thick at this point and clumped together.
- Remove the pan from the heat and add the parsley and pizza seasoning, and stir to combine
- Spoon the mixture onto the parchment-lined cookie sheet and spread it evenly.
- Place it in the refrigerator for at least an hour or until firm
- Once it has set, cut it into 16 rectangles
- Fry in batches for about 2-3 minutes per side or until golden brown.
- Drain on paper towels
- Top with fresh lemon juice, Parmesan cheese and more parsley
