I love smashed potatoes, but they don't really love me back! But I'm not overly keen on cauliflower's flavor either. Still, I need to watch those carbs. So I developed my version of the popular mashed potato cauliflower dish.
- 1 head of cauliflower, cut down, and stems removed, so that only florets are present
- 1 small yellow or russet potato (around 3" circumference)
- 1/4 cup sour cream (lite is ok)
- 1/4 cup Neufchâtel cheese
- 2 tbsp butter or margarine
- Chop the cauliflower into small pieces
- Cut the potato up into small pieces
- Place both in a microwave bowl, add 1/4 cup of water, and cover
- Cook at 2-minute intervals until fork-tender
- Place it in a tea towel and give it a squeeze until no water runs out
- Place in the processor with the cheese, sour cream, and margarine, and pulse to smooth (don't pulse to mush!).
- Add salt and pepper and mix by hand.
