Lightened Pulled Pork

Pulled pork wasn't always popular except in the South, where pork was king! This recipe calls for the pig to be cooked from beginning to end, and you can do it easily enough. You need patience while you smell it roasting! lol

  • 1 lb pork tenderloin
  • 1/2 tsp pepper
  • 1 tbsp olive oil
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1 cup diced onion
  • 2 minced garlic cloves
  • 1/2 cup lower sugar barbecue sauce (I use Sweet Baby James Original)
  • 1/4 cup water
  • 1 tsp vinegar

  1. In a pan, heat the oil until glistening.
  2. Sear the loin on all sides.
  3. Remove and season with pepper, and place back in.
  4. Cover and bake at 350 for 25 minutes.
  5. Add the onion to the pan and saute. 
  6. Add the garlic just as the onion becomes translucent.
  7. Add the sauce, water, and vinegar, and place the loin back in.
  8. Simmer for 10 more minutes, then remove and shred.
  9. Add back into the sauce.
