(No Kneading • Moist & Hearty)
- 200 grams unsweetened Greek yogurt
- 2 eggs
- 1 tbsp oil
- 200 grams quick or old-fashioned oats
- 2 tsp baking powder
- 1/4 tsp salt
- (add-ins, optional: seeds, honey, raisins or cranberries)
- Preheat oven to 350
- Line or lightly grease a loaf pan
- Preheat oven to 180°C / 350°F.
- Grind the oats into flour using your blender or processor
- Blend the egg, oil, and yogurt until smooth
- Add the dry and blend until smooth [if the batter is too thick, add a little milk or water by tbsp at a time]
- Pour into a loaf pan and top with seeds if desired
- 350°F for 35–45 minutes until golden
- Insert a toothpick into the center: moist crumbs are fine, but it shouldn’t be raw batter.
- If the top browns too quickly, loosely cover with foil.
- Remove and cool before slicing.
