Sweet Potatoes are finally being recognized as the grand vegetable they are! Stuffed white potatoes have long been a favorite but have you tried stuffed Sweets?
- 4 sweet potatoes
- 1 lb burger, ground turkey or ground pork
- 1 tbsp avocado oil
- 1 tsp each: Cumin, paprika, sage
- 1/2 tsp salt and pepper
- 1 cup cottage or ricotta cheese
To begin, you need to bake them.
- Wash the potato well.
- Poke with a knife.
- Dry off and spray with olive oil.
- Wrap up in foil, making sure to turn up the ends to avoid leakage.
- Place on a metal sheet pan and bake at 375 for 60 minutes (test with a fork for tenderness). Time varies depending on size. [Note: you can store them for up to a week.
- While they're baking, cook up your meat of choice. You can use burger, sausage, ground turkey, or any combination. I prefer to use a straight-up, fresh-ground burger as lean as possible.
- Brown the oil and drain, add the seasonings, return to medium heat, and add 1/4 cup of water; cook down until the water is gone.
- Allow the potatoes to cool a bit before unwrapping, slicing open, and spreading apart.
- On top of each, place 1/2 cup of the cheese and 1/4 of the beef, then add any other items you may want, like chopped avocado or even salsa!
These have a Mexican flair, but you could really do this in a variety of ways. I like to use ground sausage mixed with raisins or craisins and some Mascarpone cheese.
