Peanutty Peanut Butter Cookies

  Measuring by scale is key to making these. I know. I know. This isn't what your Mama did. But didn't her PB cookies also come out rather dry? Sure, you could make those cool hash marks, but the cookies themselves didn't really have the peanuttiest flavor! This cookie does. YOU MUST MIX THIS RECIPE BY HAND!

  • 7.5 oz All Purpose Flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 10.5 oz brown sugar
  • 1 cup creamy peanut butter of good quality
  • 2 tbsp honey
  • 1 tsp vanilla
  • 4 tbsp melted, browned butter 
  • 2 eggs
  • 1/4 cup whole roasted peanuts, chopped

  1. Whisk together your flour, soda, and salt
  2. Melt the butter and cool to room temp- watch carefully!!!
  3. In a large bowl, mix together the sugar, honey, and melted butter. Whisk until smooth
  4. Add in eggs one at a time
  5. Whisk in the peanut butter until smooth
  6. Add in the flour, a little at a time, mixing until just incorporated. 
  7. Add in your chopped peanuts or wait and put them on top just before baking.
  8. Bake at 350 for 8 minutes or until the edges are only light brown.

Additives! 
Try chopping up some chocolate chunks into small bits and adding them in. 
Or you could add in some extra peanut butter chips if you like.
