Buttermilk Pancakes

  • 2 cups all-purpose flour
  • 2 Tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp fine sea salt
  • 2 cups low fat buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 Tbsp unsalted butter, melted
  • 2 Tbsp Light olive oil or vegetable oil, plus more as needed to sauté 

  1. Whisk the dry together
  2. Whisk the wet together
  3. Add the melted butter in at the end
  4. Stir but keep some lumps in.
