1950s Breakfast on a Bun

The breakfast sandwich is not a new thing and was enjoyed at diners with a side of pan-fried potatoes. But it didn't look like those frozen things you buy today and I bet it tasted 100% better.  You need for each sandwich:

  • 3 oz sausage patty (pork, turkey or chicken) very thinly smashed
  • 1 large egg
  • 1 tbsp milk
  • pinch of salt
  • 1 tbsp each finely chopped onion and bell pepper
  • 1/2 tbsp margarine or butter (or EVOO)
  • 1 hamburger roll or Sandwich Slim (you could even crust up some sourdough!)

  1. First, butter the inside of the roll and lightly toast it in a nonstick pan.
  2. Set aside.
  3. In the same pan add the onion and bell pepper and cook until soft.
  4. Mix the egg and milk and scramble with the onion and bell pepper.
  5. Remove and sit aside.
  6. Press down the patty until very thin and cook in the same skillet.
  7. Assemble your sandwich and enjoy!
