Giblet Gravy

  • Turkey giblets from 1 turkey
  • 1-3/4 cups chicken stock
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 hard-boiled large eggs, finely chopped
  • 2 tablespoons all-purpose flour

  1. In a large saucepan, combine giblets, chicken stock, salt, and pepper. 
  2. Bring to a boil. 
  3. Reduce heat; cover and simmer 1 hour. 
  4. Remove from the heat. 
  5. Strain giblets; return cooking juices to the pan. 
  6. Set aside 2 tablespoons of juice. 
  7. Finely chop giblets; add giblets and eggs to the pan.
  8. In a small bowl, combine flour and reserved cooking juices; gradually stir into the pan. 
  9. Bring to a boil over medium heat; cook and stir until thickened, 2-3 minutes.
