- 2 1/2 cups sugar
- 1/2 cup water
- 1/2 cup Karo light syrup
- 2 egg whites
- 2 tbsp sugar
- 1 tsp vanilla extract
- 2 cups chopped pecans
- Add sugar, water, and Karo syrup to a pot and cook over medium heat.
- It will eventually start to boil; just stir occasionally until it reaches the thread stage.
- The thread stage is when you take your spoon out of the mixture, and a solid, non-dripping line forms on it. It takes a little bit to get there, but keep going!
- In a mixing bowl, add eggs and 2 tbsp sugar, and while your syrup mixture is nearing thread stage, whip up the eggs and sugar until stiff peaks form.
- Once your syrup mixture reaches the thread stage, slowly pour the mixture into the mixing bowl with the eggs while it’s mixing on high speed.
- Add vanilla extract and mix.
- After mixing for 3 minutes, fold in chopped pecans.
- Stir until it starts to thicken up - about 5 minutes or so -and hold its shape more.
- Add a few tbsp of the mixture to the parchment paper and let it cool until hardened.
