- 1 lb ground turkey (Drain turkey well to prevent watery layers)
- 2 cups fresh spinach, chopped
- 1 cup ricotta or cottage cheese
- 1 ½ cups shredded mozzarella
- 1 cup sugar-free marinara sauce
- 1 egg
- 1 tsp olive oil
- 1 tsp Italian herbs
- Salt and pepper to taste
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and cook ground turkey with herbs, salt, and pepper until browned.
- Stir in spinach until wilted.
- In a bowl, mix ricotta with egg and half the mozzarella.
- Layer the baking dish with sauce, turkey-spinach mix, ricotta blend, and repeat.
- Top with remaining mozzarella and bake for 25–30 minutes until bubbly and golden.
- Let it rest 5 minutes before cutting to keep layers firm.
