Low-Glycemic Turkey & Spinach Lasagna

(No Noodles)

  • 1 lb ground turkey (Drain turkey well to prevent watery layers)
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta or cottage cheese
  • 1 ½ cups shredded mozzarella
  • 1 cup sugar-free marinara sauce
  • 1 egg
  • 1 tsp olive oil
  • 1 tsp Italian herbs
  • Salt and pepper to taste

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil and cook ground turkey with herbs, salt, and pepper until browned.
  3. Stir in spinach until wilted.
  4. In a bowl, mix ricotta with egg and half the mozzarella.
  5. Layer the baking dish with sauce, turkey-spinach mix, ricotta blend, and repeat.
  6. Top with remaining mozzarella and bake for 25–30 minutes until bubbly and golden.
  7. Let it rest 5 minutes before cutting to keep layers firm.
