Mini Egg & Cottage Cheese Cups

  • 1 cup cottage cheese (blended smooth)
  • 6 large eggs
  • 1/4 cup shredded mozzarella or cheddar
  • 2 tbsp chopped chives or green onions
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp everything bagel seasoning
  • Pinch of salt & black pepper

Optional Topping:

  • Extra sprinkle of everything bagel seasoning before baking

  1. Preheat oven to 350°F (175°C). 
  2. Lightly grease or line a muffin tin.
  3. Whisk together eggs, cottage cheese, shredded cheese, garlic powder, onion powder, salt, and pepper until smooth.
  4. Pour the mixture evenly into muffin cups, filling about 3/4 full. 
  5. Sprinkle tops with everything bagel seasoning.
  6. Bake for 18–20 minutes, until puffed and set in the center.
  7. Let cool slightly before removing. 

Serve warm or store in the fridge for grab-and-go breakfasts.
