Savory Breakfast Plate

serves one person

  • 2 large eggs
  • 1 tbsp milk (optional, for fluffy eggs)
  • 1 tsp butter or olive oil
  • 1 cup mushrooms, sliced
  • 1 cup fresh spinach
  • ½ avocado, sliced
  • Salt & black pepper, to taste
  • 1 green onion, chopped (for garnish)

  1. Heat a little olive oil in a pan.
  2. Add mushrooms, season with salt and pepper, and sauté until golden brown.
  3. In the same pan, quickly sauté spinach with a pinch of salt until just wilted. Remove and set aside.
  4. Whisk eggs with milk, salt, and pepper.
  5. Cook gently in butter/oil, stirring until soft and fluffy.
  6. Place scrambled eggs, mushrooms, spinach, and avocado slices on a plate.
  7. Sprinkle green onions and extra black pepper over the eggs
