Cream of Potato Soup

This is the 1940s simple recipe that works like a champ and is so quick and easy!

  • 4 medium potatoes
  • 1 medium onion, chopped fine
  • 1 1/2 cups boiling water
  • 2 tbsp butter
  • 2 c milk
  • salt and pepper

  1. Pare and dice the potatoes
  2. Cook potatoes and onion in boiling water until tender
  3. Mash in the water they were cooked in
  4. Scald the milk
  5. Add milk,butter salt and pepper to the potatoes and reheat
