Flounder with Coconut Crust

 Serves 4 at 201 calories per

  • 1/3 cup shredded coconut (may use sweet or unsweet)
  • 1 cup panko breadcrumbs
  • 2 tbsp chives
  • pinch paprika
  • 4 skinless flounder tenderloins
  • salt and pepper to taste

  1. Mix the coconut, panko, chives and paprika with the salt and pepper
  2. Arrange tenderloins on baking sheet and top with some of the crumble and cook in preheated 350 degree oven for 15 minutes

Serves well with a baked small potato and some arugula salad
