Serves 4 at 201 calories per
- 1/3 cup shredded coconut (may use sweet or unsweet)
- 1 cup panko breadcrumbs
- 2 tbsp chives
- pinch paprika
- 4 skinless flounder tenderloins
- salt and pepper to taste
- Mix the coconut, panko, chives and paprika with the salt and pepper
- Arrange tenderloins on baking sheet and top with some of the crumble and cook in preheated 350 degree oven for 15 minutes
Serves well with a baked small potato and some arugula salad
